It’s been a busy week around here and I’ve figured out that I tend to either clean or cook when I’m stressed.
Work has been really busy since I’m covering for a coworker while she’s out on maternity leave. What does that mean to me? Let’s see what I can make, can, dehydrate or create. Dehydrate won out this time. (Last time it was fig preserves.) What did I dehydrate? How about pineapple and cottage cheese. Oh, that sound normal right? How about pineapple and cottage cheese together! That’s right. Mix one tub of cottage cheese with an equal part of crushed pineapple. Toss it into a blender and pulse until the pineapple chunks are not visible.
Once everything is mixed up and ready to go, spread it onto one of your solid trays that go with your dehydrator. I used the one that is usually used for making fruit leather or roll ups.
I had two trays to dry and I kept an eye on things so that they didn’t get too hot and try to cook. Over night everything dried out and turned a slight yellow color.
Once everything cooled I picked up the dried ring and with my kitchen scissors cut it into strips like beef jerky! Once I had every thing cut up I vacuum sealed the strips in a mason jar for safe keeping. It tastes pretty good and will go good with some nuts and things when I mix up trail mix for hiking. I was amazed at how little there was once everything dried out. It weights less that an 1/8th of it’s original weight!
