Yep.. I’m Betty Crocker today.. weird huh? I dug out the slow cooker and made a pot of homemade veggie soup just like mom makes. What it really needed though was a big ‘ole skillet of cornbread to go along with it. Carbs? Hmm, I didn’t put any in so wouldn’t that mean its carb-free? Not!
Homemade Veggie Soup
1 – 32 oz bag of Frozen Mixed Vegetables
1 – 6 oz can Tomato Paste
2 – Beef Flavor Bouillon Cubes
1 – 14 1/2 oz can of Tomatoes, Okra, and Corn
1 – Tbsp oil or shortning, bacon grease (if you have it)
Add enough water to cover, slow simmer for 2 hours. Salt and Pepper to taste. Add one cup of broken up wide noodles. Cook until noodles are ready. Makes about 8 large servings.
